Coconut Layer Cake


This months Cake slice bakers baked Coconut Cake! I've been waiting years to try a recipe, and was ecstatic when this cake won the vote! 
I decided to wait for Easter to make the cake. It was pretty simple to put together. The frosting was a new technique for me, and absolutely loved it. It's results are absolutely the creamiest! It's light and not sweet like your traditional American buttercream. 
I enjoyed every crumb of this cake. It brought back memories of that square coconut cake my mom use to buy at the supermarket. If I'm not mistaken I think hostess used to make it. It was a square cake frosted, and covered in flaked coconut. No one I know seems to remember this cake, I swear I'm not making it up! 



Any how, I loved this months cake, and hope nobody else does so I can take the rest home!

I am sure that you have to make another cake so everyone loved it! Ok, I believe you in the square cake from when you were younger...

Now you made me wish I tried out the frosting.....

It looks delicious Anabel. Your totally right about the buttercream it was so light and not overly sweet at all. I loved it!

Anabel, that looks gorgeous! I do remember that cake you're talking about. I never had it, but I remember seeing it at the grocery store.

I can certainly see why your cake was so popular as it look amazing. There may just be a few of us who are making this cake again and again.
