Strawberry Mousse Cake


Five and a half years, 55 cakes later, the opportunity to bake a Strawberry Cake with the Cake Slice Bakers has arrived! My daughter recently had a birthday in April and I begged her to choose this cake. She didn't budge. A coworker was lucky enough to have a birthday a few days apart, and I decided to bake this for her.


As I prepped for the cake, I realized this was going to be a four layer cake, also a first for me with the cake slice. I read through the recipe carefully, wanting to avoid any error, since the cake was for a birthday celebration. I decided the filling was not going to be enough for me to layer in between the four cake layers. I doubled it. You can't have enough decadent mousse in a cake, it's one of my favorite fillings for a cake.


I loved how the cake layers baked up. I loved the flavor of the cake. A perfect balance of vanilla and almond. The buttercream was also delicious. Loved everything about it. 


The only thing I would do different the next time around is cut the recipe in half! It was an enormous cake! Four layers, and 8" high! I honestly thought was going to collapse on the way to work! It made it safely!

I am planning to bake this one for church potluck this weekend. I will halve it for sure. Would you just half the cake part and leave the frosting and filling as is?

Yes! I loved the thick layers of the filling, and it wasn't overly sweet it was perfect!

You nailed this one, it is gorgeous!! Transporting this one would have been like delivering a wedding cake. This cake and the sheet cake were vying for my attention. So much temptation here and congrats on this beauty!

What a glorious cake! Perfectly frosted and decorated and 8"...eight inches!...high. Glad I only made a half recipe, and it was still a bit too much. Can't imagine a full four layer beauty like this. Excellent!

What a GORGEOUS cake Anabel! That is absolutely stunning! I think also, it's the height of the cake...so impressive. Perfect for a birthday celebration. When in doubt, I do what you do...make a double batch of frosting. Looks like it turned out perfectly. Thanks for 4 great choices this month! : )

Beautiful cake Anabel, I wish I could cut a slice and dig in. Your co-worker was a very lucky lady indeed, I would have been a nervous wreck traveling with a tall beauty like this.
