Eggnog Bundt Cake #TheCakeSliceBakers


We have come to the end of baking from The Perfect Cake! This book is filled with fantastic recipes that have been tested for perfect results in your home. I had several favorites from this book! Lemon happens to be one of my favorite flavors in baking, and both the Lemon Buttermilk Sheet Cake and the Lemon Pudding Cakes I made were extremely delicious! 


Chocolate cake is also a favorite in our home. I made three delicious chocolate recipes, the Wellesley Fudge Cake was delicious! I recommend letting it sit for 24 hours before slicing and serving. The chocolate frosting seepes into the layers making it incredible moist and fudgy! Another delicious chocolate cake that made an impression was the Old-Fashioned Chocolate Cake. It’s that childhood cake you grew up eating, simply nostalgic. The Boston Cream Cupcakes were delicious as well! The perfect combination of ganach and custard, they were a delight to eat.



The King Cake was also delicious, filled with pecans, cinnamon and sugar. The Peanut Butter Jam Cake and Spiced Pumpkin Cheese Cake we’re also favorites.



For my last bake I kept it simple. I chose to bake the Eggnog Bundt Cake. The whole house smelled of Christmas while this cake baked. 
I loved the eggnog center of the cake, and wished it had more of it.

Cranberry-Sour Cream Pound Cake #TheCakeSliceBakers

     

November has been flying by in front of my eyes. To be honest I was going to skip this months Cake Slice bake. Somehow I managed to whip this up while my pizza baked last Friday night. A few substitutions had to be made due to it being last minute.


I had exactly enough flour to make 1/2 the recipe, but no fresh cranberries or sour cream. I soaked dried cranberries in orange juice, then drained. I also substituted the sour cream for greek yogurt. The batter was rich and delicious! Although these turned out quite tasty, I do feel they were overly sweet. Americas test kitchen knew this, and recommended the fresh cranberries and sour cream to cut through the richness. I always try my best to make the recipes just as is, to give it a fair chance. Then if something is not to my liking then I make adjustments the next time around. Despite the sweetness these flew off the cooling rack pretty quickly.

Spiced pumpkin cheesecake #TheCakeSliceBakers


I’ve been waiting for the weather change to bake this months Cake Slice selection. I had my choice picked out the minute we had our choices. I was hoping for overcast chilly weather, but it just didn’t happen. Low 80’s and clear skies made me wait till the last minute to bake. I even switched my choice! I had first selected the Maple Cake, but then decided I needed to give pumpkin cheesecake another shot! 


I dove into the recipe without reading the instructions. I realized half way through I needed to pat dry the pumpkin puree. That wasn’t going to happen, I skipped this step. I also made two other minor changes. The butter and spices were both cut back by half the amounts. Although I love spices, I just don’t like them overpowering everything else in the recipe. 
This pumpkin cheesecake turned out delicious! Creamy, light, and perfectly spiced! I’m definitely going to make this again!

Carrot - Honey Cupcakes #TheCakeSliceBakers


I had my cake picked out for this month, then changed it last minute. I have a fantastic carrot cake recipe, that I wouldn’t change for anything. Its simply delicious, despite the recipe only calling for one spice. 


After giving it more thought, I decided to choose the carrot-honey cake. The recipe got my attention because it calls for honey as the sweetener in both the cake batter and frosting. 


Cloves, nutmeg, and cinnamon give this batter a lovely fall scent. I did hold back just a little on the cloves. If not careful they can quickly overpower all the other flavors in the cake. I used freshly ground cloves and nutmeg. I haven’t had much success grinding my own cinnamon, so preground it was. 


The batter was perfectly balanced with the spices. Quite delicious! I also decided to make cupcakes instead of the cake. Faster cooling tine, and easier to eat. 


Walnuts were not in the recipe, but I had them in my pantry. Plus the frosting was screaming for them! The cream cheese frosting was light and delicious. This cupcake tasted healthy and felt guilt free to eat. Glad I gave this recipe a chance.

Peanut butter and Jam cake #thecakeslicebakers




There’s nothing more comforting than a PB&J and a tall glass of milk! At least for me, so when we had our choices this month this one caught my eye. 



The cake was super easy to make. I needed a less complicated recipe this month. I was busy  trying get our camping trip organized. I knew I had all my ingredients on hand except the roasted peanuts. 


I loved that the cake did not dome! The layers baked evenly without the baking strips I normally use. Trying to keep it as simple as I could, I didn’t want to fuss with soaking the strips. 


I used a strawberry spread in this cake, it’s what I had on hand. The recipe calls for raspberry, but my  PB&J has always been made with strawberry jam, so it’s what I used. I also made half of the recipe and baked it in two six inch round cake pans. The I other slight change I made is to the frosting. I used a vanilla bean paste instead of the extract due to recipe running out unexpectedly. 


Loved everything about this cake, super yummy! It was a huge hit with the family, they kept saying it’s just like a PB&J!

Lemon Buttermilk Sheet Cake #TheCakeSliceBakers


We continue to bake from The Perfect Cake by America’s Test Kitchen! The book is filled with delicious recipes that have been tested over and over, to give us a perfect bake each time! Lemon Buttermilk Sheet Cake was my choice this month with the Cake Slice Bakers. An easy choice for me since I love lemon! 


The recipe is super easy to make. The batter is sinfully delicious! Loved the way the cake baked up. It  made my kitchen smell so incredibly delicious! Someone seriously needs to come up with a lemon batter candle scent! 


I made a third of the icing recipe, only because I had a gutt feeling this cake would be great without the thick icing. I didn’t want the sweetness of the icing to over power the flavors of the cake. 



I was right! The cake was perfect with just a thin layer of the lemon icing! Loved the buttery-lemony-vanilla flavors of the cake!

The Farmers’s Daughter’s Cake

It’s not too often I bake the Cake Slice bonus cake. I had cream I had to use up before it went bad, and decided it was time to test this recipe. 




For our bonus bake this month, we were given the option to bake from Maida Heatters Cakes!
I enjoyed baking from this book, and still have a few recipes bookmarked, including this one!



The  batter was super easy to put together. The recipe has no butter or oil, it’s made with heavy cream. The batter was quite tasty, and anticipated a great result.


I would love to say the cake was fantastic, but just not the case. The cake turned out dry. Pretty disappointed. Not so bad if you chase it down with ice cold milk. 


The icing was way too sweet for my liking. Glad I only made half the icing recipe. Regardless of not being the best yellow cake I’ve baked up, it disappeared quickly the next day. No one really said anything and seemed happy to have cake to snack on through out the day.

Old-Fashioned Chocolate Cake #TheCakeSliceBakers


This months Cake almost didn’t happen. Not that I didn’t feel like baking. Only because my pantry has been low on ingredients, and I didn’t feel like making a run to the grocery store on a lazy Sunday.

Being that it was Fathers Day I wanted to bake for my husband. I decided to review this months Cake Slice choices one more time, hoping I could at least do half a recipe. 
The Old-Fashioned Cake was the winner! With limited ingredients on hand I made a few minor changes. I used regular cocoa powder, and reduced the baking soda to one teaspoon, and added 1/2 teaspoon of baking powder. I also had no unsweetened chocolate, and used semi-sweet chocolate, and  omitted adding sugar to the melted chocolate mixture.




Being that it was a lazy Sunday I opted for a loaf pan, less pans to grease and wash. I had unexpected leftover batter, and it was easier to pop liners in the muffin tin than grease another pan. So cupcakes  it was! 


Loved everything about this recipe! Especially the new mixing technique! This recipe uses a ribboning mixing technique versus the creaming and reverse method mixing technique. Loved it! The cake and cupcakes turned out simply delicious! The frosting was outrageously delicious too! I made a third of the chocolate frosting recipe and had plenty to generously frost my chocolate loaf and the nine cupcakes. 
I had one happy Dad on Fathers Day.

Cream Cheese Coffee Cake #TheCakeSliceBakers




This month with the Cake Slice Bakers I chose this delicious Cream Cheese Coffee Cake. This recipe called for lemon zest in the batter and the crumb topping. I was a little afraid this coffee cake might lean towards a lemon cake, but it wasn’t the case at all. 



The topping on this cake gave it a great texture. The lemon zest gave it a light delicious flavor. The crumb of the cake was perfect. The filling was also delicious. Loved everything about this cake, except the prep work. For some reason it took me awhile to get this Cake put together, and I can’t believe the mess I made. It was worth it!

Lemon Pudding Cakes #TheCakeSliceBakers


Lemon Pudding Cakes was my choice this month with The Cake Slice Bakers. It was hard to decide this month, every single recipe sounded simply delicious! 


I went with the recipe I’m not familiar with. Plus it was lemon. Who doesn’t LOVE lemon?! This dessert reminded me of lemon bars. Sweet and tart, but this was even better! It was a melting cloud of  lemony sweetness! 


The top layer was a light fluffy cake, the bottom was a delightful lemon custard! Scrumptious!

Luxe Pound Cake


The Cake Slice Bakers have been given a bonus book to bake from every month.  This month our bonus book choice is The Cake Book by Tish Boyle.


This decadent pound cake is made with three cups of sugar! Just a bit too sweet for me, but loved the crumb of the cake. The recipe also calls for vanilla and almond extract making the cake delicious! 



I would definitely make this recipe again, cutting back a cup of sugar. Hopefully it doesn’t alter the crumb of the cake. I want to be able to enjoy all the flavors without having a punch of sugar. This pound cake would be great to serve with macerated strawberries and fresh whip cream!

Wellesley Fudge Cake #TheCakeSliceBakers



"Pies, lies, and doughnuts should never have a place at Wellesley College," declared Henry Durant, founder of Wellesley College. Can you imagine such a thing?! It certainly didn’t stop the students from secretly practicing their fudge making skills, which led to the Wellesley Fudge Cake! 



Day 1: The cake had a drier crumb. 


This months Cake Slice choice was hard to choose from. I decided to go with the Wellesley Fudge Cake.  I needed a frosted layered cake to go with my husbands birthday dinner. Sure glad I picked this one, this cake turned out amazing! Even better the next day after sitting out in the cake keeper. The fudge seemed to seep into the layers making the cake moist and fudgy! 


Day 2: The fudge seeped into the layers giving them a moist texture.

The cake baked up very tender and delicate. I had a heck of a time frosting  the cake without crumbs breaking off and sticking to the spatula. If you make this cake, my advice is to be patient and let it sit a day before slicing it, it’s worth the wait!
