Lemon Drizzle Bundt Cake



I always look forward to baking with The Cake Slice Bakers. Lately though, I find myself running out of time and missing the deadline. I knew I wanted to bake our last selection from our current baking book before we move on to our new book. I found some time to squeeze my bake in and sifted through the book to find a recipe I could make without having to run to the supermarket for ingredients. I chose the Lemon Drizzle Bund Cake! 


This cake requires you make a lemon curd that is piped in between the cake batter. I was excited that finally after so many years of baking, I would finally have the task of making lemon curd. The directions seemed easy enough, and gave me the confidence that this would be easy to make. 



I followed the directions, and it seemed to have turned just fine until I had a taste test. The curd had a metallic taste to it. At first I thought it was due to pre scrubbing the pot with a steal wool, I figured I didn’t rinse it well enough. After doing a little research, I found that this is pretty common when you make lemon curd in a reactive pot. I still proceeded to use the curd in my cake. I didn’t get that oozing effect with curd when you slice the cake. I did love the texture and flavor of the cake, although you could detect the metallic taste right after I baked it. The next day it seemed to have dissipated. I can assure you this cake was devoured by the second night. I would definitely make this cake again!

Pomegranate Creme Cake #TheCakeSliceBakers




This month I chose the Pomegranate Cream Cake to bake with The Cake Slice Bakers. I’ve loved all the recipes I’ve made from this book that have called for mascarpone cheese. Mascarpone cheese just makes your frostings so decadent! 


The cake was pretty easy to make, the problem happened with the frosting. My frosting curdled when I added the mascarpone cheese! Yes, it curdled! I’ve never had this happen to me before and I was quite disappointed. I was really looking forward to the frosting. Luckily I had a package of cream cheese in the fridge, and I quickly made a cream cheese frosting instead. I really liked the cake, I thought it had the right balance of sweetness and tartness. I would definitely make this cake again!

    Italian Coconut Crème Cake #TheCakeSliceBakers


    I’m back baking with The Cake Slice Bakers after a brief summer break! I can’t remember the last time I took this much time off?! I may skip a month every now and then, but rarely three months in a row! This summer was a bit overwhelming for me, I just didn’t seem to fit baking with the group, before I knew it I had ran out of time, or had a unexpected invite to attend to. Then there was vacation and a weekend getaway! 


    With fall approaching, I hope to slow down and take time to do what I love to do the best, BAKE! I know for sure my husband missed the cakes, and keeping him in mind I chose a cake he would love! This month cake choice is Italian Crème Cake. 


    This choice made me love this cookbook even more! This cake turned out delicious! I did my best to stick to the original recipe, but when it came to the frosting ingredients I swapped the sugar for powdered sugar, and left the cream of coconut fat out, only because the cream of coconut did not 




    solidify, and I was not able to remove the fat from the liquid. I did although add a few tablespoons of the cream to the frosting. 


    Everything seemed to have worked out because the cake was HEAVENLY! Everyone seemed to have enjoyed it, especially my husband! This recipe is a must to try. Go grab a copy of this book and make this cake, you won’t regret it!

        Amaretto Crème Cake #TheCakeSliceBakers


                                              

        I knew instantly which cake I would choose to bake with the Cake Slice Bakers. This cake consists of layers of sponge cake soaked in a amaretto creme syrup, and filled with. decadent amaretto mascarpone cream. Heavenly! 


        The past few months I have been more excited than ever to bake with the group. I’m only allowing myself to indulge once a month, and look forward to it each and every time! The hard part is staying disciplined to only a serving, and having to see the leftovers in the fridge for a few days afterwards.


        I’m going to have to warn you the creme on the this cake is absolutely sinful, your going to want to take the entire bowl and eat every spoonful! It’s so good! It compliments the amaretto cream soaked sponge cake, it’s crazy good! Grab yourself a copy of this book and make this cake!

        Opera Cake #TheCakeSliceBakers


        When I first read this recipe, I instantly thought Tiramisu! I love Tiramisu! This cake reminds me of it, although not exactly the same. This Opera Cake cake has layers of sponge cake made with almond, flour, eggs,  sugar, and vanilla. 


        Sandwiched between layers of filling made with mascarpone cheese, coffee liqueur, espresso, chocolate, and sweetened whipped cream. Devine!  The sponge cake is also soaked in a espresso-coffee liquor syrup. Heavenly! 


        This is one delicious cake! Absolutely worth every calorie! I’m really glad the Cake Slice Bakers are baking from this book!

        Toscakaka Torte #TheCakeSliceBakers

        I’m finally getting to this months cake. I didn’t get to bake the Creme Brûlée Cheesecake I had originally intended. This month had unexpected events that kept me from posting on time. 


        I’m actually surprised I even baked at all. The weather has been a bit chilly and today it just felt like baking weather. I opened my book to review this months cake choices just in case I had the ingredients on hand to participate. I did! At least enough ingredients to bake half the cake.




        I chose to bake the Toscakaka Torte. The batter turned out a beautiful caramel color. Loved the flavor! I baked my cake in a 8"round cake pan. 




        My cake was done in 23 minutes. I thought I might have a problem when it came to serving the cake, thinking my cake might just not cooperate coming out of the pan. It was fine, it did not stick to the pan. 
        The cake has a rich buttery flavor, and the caramel and almonds compliment it well! Quite delicious, it did not disappoint!

        Banoffee Cake #TheCakeSliceBakers


        It’s reveal day for the Cake Slice Bakers! I chose to bake the Banoffee Cake. I had never heard of this cake before, ever. 


        The cake layers are made with finely chopped pecans. Each layer is layered with Dulce de Leche, fresh sliced bananas, fresh whipped cream, and a dusting of cocoa powder.


        This cake was out of this world delicious! It was worth every single calorie! My whole family enjoyed it, and agreed this recipe is a keeper. 


        I can’t wait to have the chance to make this recipe again. Absolutely delicious!

        Madeira Cake #TheCakeSliceBakers


        It’s a New Year, and a new book to bake from with the Cake Slice Bakers! Although last years book was fun to bake from, I’m always eager to bake from a new book. This years baking book is The European Cake Cookbook by Tatyana Nesteruk. 


        For my first bake I chose the Madeira Cake. Lemons are in season and I cannot pass up the opportunity to bake with them. They are my favorite fruit to bake with. I do need to warn you that the cake batter is sinfully delicious! I couldn’t have licked bowl and spatula any  cleaner! I do believe we can blame the almond flour in the recipe for making this a delicious cake. Almond flour, butter, and zest, it’s a beautiful trio!
